Petit d'Affinois 150g, Cows Milk, Double Cream, France
While working on the production line at a yoghurt factory in the Dauphine region of France, south east of Lyon in the 1980s, Jean Claude Guilloteau had a eureka moment. He came across a new way of making yoghurt using a special technique called ‘ultrafiltration’, and so began his obsession with applying the same technique to cheese making. The new technique not only preserves nutrients but also results in a very smooth, silky texture and rich creamy flavour, making the d’Affinois (down under we affectionately call it ‘daff’) range of cheeses one of the world’s most sought after.

Yarra Valley Dairy Saffy, Cows Milk, Soft Cheese, Yarra Valley, Victoria, 275g
Fresh cows milk cheese is marinated in saffron, lemon rind, cumin seeds, garlic & olive oil to create a lusciously creamy cheese with a hint of honey & saffron with a zesty lemon finish.

Just one hour from Melbourne, the Yarra Valley has a long history of dairy farming and is renowned for its stunning scenery as well as producing superb wine and artisan food. Reflecting the traditional farmhouse cheeses of France and Italy, expect cheeses that are fresh and soft in style, from the Yarra Valley Dairy. Only using the freshest cows milk from nearby Yarra Valley dairy farms and goats milk from the neighbouring region of Mansfield in the foothills of Victoria’s High Country Alps, these artisan cheeses are award winning (and delicious!)

Quicke’s Cheddar Extra Mature 18m 150g, England, Semi Hard, Cow
This extra mature, clothbound cheddar is made the old-fashioned way. Farmhouse cheddar, made on the farm and in small batches, is hard to find and demand is greater than supply.

Quicke’s ethos is quality over quantity. They manage their herd carefully, never pushing them above their breeding limits and ensuring they enjoy a long and happy life, even getting 60 days’ maternity leave prior to calving. The truckles are specially selected for their brothy, caramelly flavour and dense, fudgy texture after maturing for a minimum of 18 months. Each wheel is hand-made and reflects true craft and seasonality making each batch exciting to taste.

Woombye Cheese Company, Blackall Gold Washed Rind, Cows Milk, Washed rind, Queensland, 200g
In 2012, Karen and Graeme Paynter decided to embark on a lifestyle change that took them from their fast paced corporate roles overseas to the Sunshine Coast hinterland where they started Woombye Cheese Company. They were intent on settling in a rural community where they could source premium milk from neighbouring dairy farms, knowing that quality cheese production started with quality milk. Jersey and Friesian milk, collected from three local farms is used to make a range of surface ripened cheese. Not out to make an intensely flavoured washed rind cheese, the Paynters have successfully created a cheese with a delicate flavour that will appeal to many palates. The pale orange rind, often blanketed by a fine white mould, is full-flavoured but subtle – just as they intended.Surprisingly mild while young but develops a more robust flavour as it ripens. A unique and delicious cheese. Gold Medal winner 2017 Sydney Royal Cheese & Dairy Show.
